Harvested from mature sturgeons using an organic feeding technique, the caviar is a true testament to quality and craftsmanship. To complement this delicate treat, free-flow Champagne was served, further enhancing the indulgence and creating a festive atmosphere that left guests with a sense of occasion. This marks just the beginning of what promises to be an exciting series of seasonal delights at VIU.

The Signature Sunday Brunch offers a bountiful spread of Mediterranean-inspired dishes, all delivered directly to your table. Begin with a lavish seafood tower, brimming with steamed blue crab, Alaskan king crab, French oysters, New Zealand mussels, and river prawns. Guests can also enjoy made-to-order dishes such as Octopus Salad “alla Mediterranean,” Rougié Foie Gras Crostini, and a selection of Italian cold cuts and cheeses.
Main courses change weekly, with enticing options like Grilled Lobster Tail with Truffle Hollandaise, BBQ Pork Ribs with Corn and BBQ Sauce, and Australian Wagyu Beef Striploin with Caponata and Beef Jus. Freshly prepared sushi, sashimi, and Thai specialities, including Boat Noodles with Wagyu Beef and Grilled Ayutthaya River Prawns, add a tantalising touch. For a final comforting flourish, handcrafted pizzas are served tableside, perfect for rounding off the meal.
