Available exclusively from 1 May to 30 June 2025, this limited-time menu invites guests to savour the exceptional flavours of Japan’s northern frontier, where cool seas and pristine landscapes yield some of the country’s most revered ingredients.
Crafted by Sous Chef Yoon SungHyun, the menu draws inspiration from the seasonal bounty of Hokkaido at its peak—when delicate seafood and premium wagyu are at their freshest. Each dish channels Akira Back’s signature East-meets-West philosophy, blending Japanese and Korean traditions with bold, modern flair.

The Hokkaido Sashimi Platter (THB 2,200++) is a stunning introduction—an artful array of scallop, uni, ikura, and kani that showcases the ocean’s purest expression. For something indulgently crisp, the Taraba Crab Leg Tempura (THB 1,250++) is a highlight, served with aromatic shiso, zesty yuzu aioli, and a touch of micro coriander.
For meat lovers, two wagyu-focused dishes make a compelling case for indulgence. The Hokkaido Wagyu Toban Yaki (THB 1,600++) features A5 striploin seared on a hot ceramic plate, accompanied by a rich mushroom medley and the restaurant’s signature toban sauce. Meanwhile, the Wagyu Nigiri (THB 800++) pairs seared A5 beef with seasoned rice, Oscietra caviar, garlic chips, wasabi pickles, and a touch of aka oroshi—bite-sized luxury on a plate.
