From March through May, patrons can indulge in the crisp and aromatic flavors of khao chae, a sophisticated dish of chilled rice complemented by classic condiments. Translating to “soaked rice,” this seasonal delicacy begins with a starter of snowy santol shaved ice with dried pork and bitter orange.
The complete khao chae experience follows, featuring rice immersed in chilled jasmine-infused water. The dish is accompanied by an array of authentic side dishes, including fried herbal fish and shrimp paste, green pepper stuffed with shrimp and minced pork in a fluffy fried egg, sweetened shredded sun-dried ray fish, sweetened shredded pork, fresh mixed vegetables, and more. The meal is complemented by a refreshing watermelon and lime soda.
