The St. Regis Bangkok is set to unveil its upcoming guest chef series, featuring the acclaimed 1-Michelin starred Chef Antonio Iacoviello from Gucci Osteria Tokyo. The culinary event will vividly capture the essence of Gucci and showcase the culinary brilliance of renowned Chef Massimo Bottura, the recipient of an impressive 3 Michelin stars for his work at Osteria Francescana in Modena, Italy.
This exclusive event will encompass a cooking class on November 15 and an 8-course dinner at VIU, scheduled from November 16 to 18, 2023.
Klaus Christandl, the General Manager of The St. Regis Bangkok, noted the success of their previous culinary collaboration with Gucci Osteria Seoul in April 2023, and he expressed his anticipation for this ongoing partnership, bringing the 1-Michelin starred Gucci Osteria Tokyo to Thailand, promising an extraordinary gastronomic experience.
Gucci Osteria da Massimo Bottura has a global presence in various destinations, including Florence, Beverly Hills, Seoul, and Tokyo, each offering its unique charm and sharing a common gastronomic ethos rooted in innovation, sophistication, and season-inspired allure.
The culinary journey at VIU restaurant will commence with “Memorie d’Estate,” an amuse-bouche cold soup crafted from three different kinds of tomatoes and strawberries, inspired by Chef Antonio’s childhood memories on his grandparents’ farm.
The following dish, “Autunno,” features sweetbread, apple, and beetroot, embodying the hearty, warm flavors of the season. “Lumaca In Verde” is a sea snail and Thai herb salad that artfully blends Italian, Thai, and Japanese influences, offering a medley of bitterness, acidity, and freshness. “Piadinia: a Love Story between Italy and Japan” is a contemporary take on the Japanese mille crepe cake, using piadina Italian flatbreads layered with local prawns.
A signature dish at Gucci Osteria Tokyo, “A Walk in the Fields,” is a pasta and Matsutake mushroom creation designed to evoke the aroma and colours of freshly cut grass. For the main course, Chef Antonio pays homage to his mentor, Massimo Bottura, by drawing inspiration from Bottura’s renowned dish “Chicken, Chicken, Chicken Where are You?” and reinterpreting the traditional Italian Parmigiana as “Deer, Where are You?”
ARTS AND CULTURE
A Mural Odyssey
Nestled in Maha Sarakham province, Northeast Thailand, the unassuming ordination hall of Wat Yang Thuang may resemble a simple rice barn upon first glance. However, a closer inspection of its walls, adorned with unique Buddhist art, transforms the ordinary into an extraordinary experience. These murals, depicted on the “sim” or ordination hall, provide a vivid portrayal of the Isaan people’s soul
A cocktail-inspired palate cleanser, “Gin Tonic,” is made from lychee and apple osmotized in Nikka (Japanese gin) and tonic water, served in small foam bites. The culinary journey concludes with “Che Fico!” inspired by Chef Antonio’s memories of the end of the Italian summer. This dessert combines bread and fig molasses, fig ice cream, and fresh fig confiture, offering a simple yet meaningful layering of flavors, reminiscent of the cuisine of Chef Antonio’s native Italy.
Chef Antonio Iacoviello, the Head Chef of Gucci Osteria Tokyo, describes the menu as being inspired by his two favourite seasons in Italy – summer and autumn, while also paying tribute to the exceptional ingredients found during equivalent seasons in Japan and Thailand. He promises to take guests on a journey from Italy to Japan, with a touch of Thainess.
